This special release cask finished gin has been a long time in the making. In 2019 we acquired brandy casks from Cadiz, Spain, and filled one with gin. After over two years, the flavors from the cask were vibrant but needed more time to integrate. We then transferred the spirit to a cask previously used for Copperworks American Single Malt whiskey and allowed it to rest for an additional two years to achieve the perfect balance. The result is a four-year-old gin that can be enjoyed on its own like fine whiskey or used to craft spirit-forward cocktails such as an Old Fashioned or Martinez.
Tasting Notes: Vibrant red-orange in the glass, this gin is quite the sipper. Zucchini bread, lemon tart, spruce tip tea, and damp wood invite you to keep nosing the glass. Red cedar up front on the palate makes way to stewed apple, pink peppercorn, finger limes, and a hit of sweet cinnamon that rolls into the finish. Along with the lingering sweet cinnamon, this gin finishes with the sensation of liquid suede and flavors of a damp pine forest.
